Buckwheat cake with jam is inspired by the Austrian cake made with buckwheat, but in my version, I replaced the butter with oil, making this dessert suitable for those who are lactose intolerant. However, I also provide the quantities for the original butter version. The buckwheat cake with jam is truly rich in flavors and very tasty, plus it is naturally gluten-free and stays soft for several days thanks to the grated apple added to the batter. The jam can be raspberry, red currant, or mixed berries, fruits with an acidic taste that perfectly complement the buckwheat flavor.

Ingredients
- 3 eggs
- 1/4 cup sugar (up to 1/2 cup)
- 1/3 cup sunflower oil (or 1/2 cup butter)
- 1 apple
- 1 cup hazelnut flour (gluten-free)
- 1 1/4 cups buckwheat flour (gluten-free)
- 1 1/2 tsp baking powder (gluten-free)
- 1 lemon
- 2/3 cup mixed berry jam (or raspberry or red currant)
- 1 tbsp powdered sugar (gluten-free)

Steps
Break the eggs into a bowl and beat with an electric mixer until the mixture is light and fluffy.
In the meantime, peel and grate the apple.Instead of hazelnut flour, you can blend whole hazelnuts.
Use a food processor to blend the hazelnuts into flour.
Blend in batches to prevent the hazelnuts from overheating and turning into a paste.Add the oil gradually to the egg and sugar mixture while continuing to beat. If using butter, add it melted and lukewarm.
Add the grated lemon zest.
Combine the buckwheat flour, hazelnut flour, and baking powder.
Mix manually with a spatula.
Finally, add the apple.Pour into a 8-inch springform pan that has been oiled.
Bake at 350°F for 40 minutes.
Perform the toothpick test.
Remove from oven and let cool before removing from the pan.
Cut in half and fill with plenty of jam.
Sprinkle with powdered sugar.
