The apple cake is a classic dessert that is easy to prepare and doesn’t require much time. Sugar, flour, eggs, and butter are the basic ingredients of this recipe that we usually have in the pantry, so it’s also ideal as a last-minute cake if we have a dinner or lunch. The butter apple cake can be enriched with raisins softened in rum or, for the more indulgent, with dark chocolate chips. It can also be made gluten-free by using specific products and lactose-free with lactose-free or plant-based products.

Ingredients
- 7 tbsp butter (soft)
- 1/3 cup sugar
- 2 eggs
- 1 3/4 cups flour (or gluten-free rice flour)
- 1 pinch salt
- 1 vanilla bean
- 1 tsp baking powder (gluten-free)
- 1 lemon
- 2 apples
- 4 tbsp apricot jam

- 1 Grater
Steps
Grate the lemon peel, open the vanilla bean to extract the seeds with a knife, set aside.
Cut the apples into thin slices and drizzle with lemon juice.
Whisk the butter and sugar until smooth with an electric mixer.
Flavor with the lemon zest and vanilla seeds.
Gradually add one egg at a time while continuing to whisk until a homogeneous mixture is obtained. The eggs must be incorporated into the butter to form a cream.
Combine the sifted flour with the baking powder, mixing by hand with a spatula.
Pour the mixture into a previously buttered 9-inch diameter mold.
Decorate the surface with apple slices.
Bake at 350°F in a preheated oven for about 40 minutes.
Remove from the oven and immediately glaze with apricot jam.
Allow to cool before unmolding.

The butter apple cake keeps for 3-4 days in a closed box.
