The apple cake is a classic dessert that is easy to prepare and doesn’t take much time. Sugar, flour, eggs, and butter are the basic ingredients of this recipe that we usually have in the pantry, so it’s ideal even as a last-minute cake if we have a dinner or lunch. The butter apple cake can be enriched with raisins softened in rum or, for the more gluttonous, with dark chocolate chips. Ingredients
- 7 tbsp butter (soft)
- 1/3 cup sugar
- 2 eggs
- 1 1/2 cups all-purpose flour (or gluten-free rice flour)
- 1 pinch salt
- 1 vanilla bean
- 1 tsp baking powder (gluten-free)
- 1 lemon
- 2 apples
- 4 tbsp apricot jam

Steps
Grate the lemon zest, split the vanilla bean and scrape out the seeds with a knife, set aside.
Slice the apples thinly and drizzle with lemon juice.
Beat the butter with the sugar until you get a smooth cream with an electric mixer.
Flavor with lemon zest and vanilla seeds.
Add one egg at a time, continuing to beat until you get a homogeneous mixture. The eggs should be incorporated into the butter to form a cream.
Combine the sifted flour with the baking powder, mixing by hand with a spatula.
Pour the mixture into a 9-inch diameter pre-greased cake pan.
Decorate the surface with the apple slices.
Bake at 350°F in a preheated oven for about 40 minutes.
Remove from the oven and immediately glaze with apricot jam.
Wait for it to cool before removing from the pan.
