Canapés with Pomegranate and Duck Prosciutto

The canapés with pomegranate and duck prosciutto are a quick but great tasting appetizer. They are an excellent way to entertain guests before sitting at the table, perhaps for Christmas lunch or other grand occasions. I also suggest orange and duck prosciutto salad and whole-grain puffs with artichoke cream for your vegetarian guests.

Ingredients

  • 4 slices rye bread
  • 8 slices prosciutto (duck)
  • 1/2 avocado
  • pomegranate jam
  • salt
  • pepper
  • 2 tablespoons extra virgin olive oil
  • pomegranate
  • 1 leaf radicchio

Tools

  • 1 Round Cutter
  • 1 Grill
  • 1 Spatula

Steps

  • Use the round cutter or any shape to cut out the canapés. Toast the bread for 1 minute on each side and let cool. Meanwhile, dice the avocado and season with oil, salt, and pepper.
    Spread the pomegranate jam on the bread.
    Place the prosciutto slices on the canapés along with the avocado.
    Garnish with some pomegranate seeds and radicchio strips.

Tips

Storage is not recommended.

Rye bread can be replaced with any other bread, preferably whole grain.
