Carnival Ricotta Fritters

The carnival ricotta fritters are a delicious dessert that can be prepared in a few minutes. To shape these fritters, use two teaspoons or two tablespoons if you prefer larger ones. Carnival ricotta fritters are soft and irresistibly flavored. They can be flavored with cinnamon, orange zest, vanilla, and you can also add plumped raisins in rum or small apple pieces if you like.

Ingredients

  • 7 oz ricotta
  • 1/3 cup sugar
  • 2 egg yolks
  • 3.5 oz milk
  • 1/2 lemon (grated zest)
  • 3 tbsp butter (melted)
  • 3/4 cup all-purpose flour
  • 1/3 cup potato starch
  • 1 tsp baking powder
  • 1 quart peanut oil
  • to taste sugar

Tools

  • 1 Bowl
  • 1 Whisk
  • 1 Pan
  • 1 Slotted spoon
  • 1 Plate
  • 2 Paper towels

Steps

  • In a bowl, add the ricotta and mix it with a whisk until smooth.

    Add the sugar and egg yolks, then mix well.

    Add the grated lemon zest and milk, mix.

    Pour in the flour, starch, and baking powder.

    Mix well and let rest for 30 minutes.

    Heat the oil to 340°F in a deep pan.

    With a teaspoon, scoop a small amount of dough.

    Shape into a ball using another teaspoon.

    Dip in the hot oil.

    Continue the same way with the remaining dough.

    Fry a few fritters at a time to keep the oil temperature from dropping.

    Cook until golden, stirring occasionally.

    Use a slotted spoon to remove the fritters and let them drain on paper towels.

    Immediately roll them in sugar.

    Enjoy both hot and cold.
