- 1 cup ricotta
- 1/4 cup sugar
- 2 egg yolks
- 1/2 cup milk
- 1/2 lemon (grated zest)
- 3 tbsp butter (melted)
- 3/4 cup all-purpose flour
- 1/3 cup potato starch
- 1 tsp baking powder
- 4 cups peanut oil
- as needed sugar

Steps
In a bowl, add ricotta and mix it with a whisk to make it smooth.
Add sugar and egg yolks, then mix well.
Add the grated lemon zest and milk, mix.
Pour in the flour, potato starch, and baking powder.
Mix well and let rest for 30 minutes.
Heat the oil in a deep pan to 340°F.
With a teaspoon, take a small amount of the mixture.
Form a ball using another teaspoon.
Immerse in the hot oil.
Proceed the same way with the remaining mixture.
Fry a few fritters at a time to maintain the oil temperature.
Cook until golden, stirring occasionally.
Using a slotted spoon, remove the fritters and drain on paper towels.
Quickly roll them in sugar.
Enjoy warm or cold.

Carnival fritters can be flavored with cinnamon, vanilla, or grated orange zest.
It is recommended to use untreated fruit.
