The cauliflower balls are a truly delicious and light vegetarian main dish. They are made with few and simple ingredients, eggs, parmesan, and breadcrumbs, flavored with parsley, which can be replaced with marjoram, lemon zest, and even a pinch of garlic powder. In the breading, we can also add a pinch of spicy paprika for an even more intense flavor. Cauliflower is a very versatile and delicate flavored vegetable, and for this reason, it can be paired with many ingredients. I cooked them in an air fryer, but they can also be baked or fried. Naturally, this dish can be made gluten-free and lactose-free. To replace the eggs, add a boiled potato weighing about 7 oz. For cauliflower lovers, I recommend the Roasted Cauliflower.

Ingredients
- 1/2 cauliflower
- 1 egg
- 4 tablespoons grated parmesan
- 4 tablespoons breadcrumbs
- 2 sprigs parsley
- salt
- pepper

Steps
Detach the cauliflower florets, wash them, and cook them in salted boiling water.
Let them cool and then mash them with a potato masher; they should not be blended.
Add salt, pepper, and chopped parsley, and mix with a spatula.
Add the egg, parmesan, and breadcrumbs.
Mix well with your hands.
Form the balls, then roll them in breadcrumbs and place them in the air fryer basket.
Oil the balls.
Cook at 400°F for 30 minutes, turning them halfway through and adding another drizzle of oil.
Serve hot or warm.
Tips
They can be stored in the refrigerator for 2 days; just heat them in the air fryer or oven for 10 minutes at 350°F.
They can be frozen already cooked.
