Try adding a tablespoon of orange liqueur to make them even more delicious. To make these cookies you will need a few simple ingredients, butter, eggs, sugar, flour, and chestnut flour. Moreover, these cookies contain very little added sugar since the chestnut flour already naturally provides sweetness. Ingredients
- 7 oz butter
- 1/4 cup sugar
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1/2 cup chestnut flour
- 1/3 cup 75% dark chocolate (chips)
- 1/3 cup almonds
- 3/4 cup boiled chestnuts
- orange zest (grated)
- 1 pinch salt
- 1 tsp baking powder

Steps
Let the butter soften at room temperature for about 1 hour or soften it in the microwave for about 30 seconds. Coarsely chop the almonds and cut the chestnuts into pieces, set aside. In a bowl, add the butter, salt, sugar, and grated orange zest, mix well with a whisk until the mixture is smooth and creamy. Add the eggs and mix. After the eggs are absorbed, add the sifted flours with the baking powder, finally the chestnuts, almonds, and chocolate chips. Knead the dough. Form a dough ball and let it rest for 30 minutes in the fridge wrapped in plastic wrap. Shape the dough into small balls the size of a walnut. Place them on a baking tray lined with parchment paper and flatten them a bit. Bake the cookies at 356°F (180°C) for 15 minutes in a preheated static oven. Remove from the oven and let cool on a wire rack.
Advice
They keep in a closed box for about 10 days.
The chocolate chips can be replaced with chopped dark chocolate.
The chestnuts can be cooked in a pressure cooker in 25 minutes, or you can buy them already cooked.
