Chicken Breast with Puffed Grains

The chicken breast with puffed grains is a tasty alternative to cooking chicken breast. Crunchy and flavorful, it will be enjoyed by the whole family. Any type of puffed grains can be used, from spelt to rice to sorghum, millet, or buckwheat. Flavor them with herbs or spices to taste. This dish is naturally gluten-free and lactose-free. They can also be cooked in an air fryer.

Ingredients

  • 4 slices chicken breast
  • 1.75 oz millet (puffed or other puffed grain)
  • thyme
  • salt
  • pepper
  • egg white
  • extra virgin olive oil

  • 1 Plate

Steps

  • In a bowl, pour the egg white, while in a plate, place the millet flakes. Salt, pepper, and season the chicken breasts with thyme. Dip the chicken breasts first in the egg white and then in the puffed millet. Place them on a baking tray lined with parchment paper. Drizzle with oil and bake at 400°F in a convection oven. Cook for 20 minutes. After 10 minutes, turn the chicken breasts and finish cooking. Serve immediately while hot.
