Chicken salad is a fresh and light dish that can be varied in a thousand ways. The one I propose is grilled chicken breast, tomatoes, cucumbers, and avocado. Among the many variations, you can use a boiled chicken breast or leftover from broth, add corn, fresh onion, carrots, but also fresh fruit like peaches. Ingredients
- 1.1 lbs chicken breast
- 3 1/2 oz lettuce
- 2 tomatoes
- 1 avocado
- 1 cucumber
- 2 tbsps extra virgin olive oil
- salt
- pepper

Steps
Grill the chicken breast. Season it with salt and let it cool, then cut it into strips.
Clean and wash the lettuce well.
Cut the tomatoes into wedges.
Peel the cucumbers and dice them.Also peel the avocado and dice it.
In a serving dish, add the lettuce and other vegetables.
Season with oil, salt, and pepper.Lay the chicken breast on top, mix, and serve.
Tips
It keeps in the refrigerator for 1 day.
The chicken breast can also be boiled.
