Chicken salad is a fresh and light dish that can be varied in a thousand ways. The one I propose to you is grilled chicken breast, tomatoes, cucumbers, and avocado. Among the many variations, we can use a boiled chicken breast or leftover from broth, add corn, fresh onion, carrots, but also fresh fruit like peaches. Ingredients
- 1.1 lbs chicken breast
- 3.5 oz lettuce
- 2 tomatoes
- 1 avocado
- 1 cucumber
- 2 tbsps extra virgin olive oil
- salt
- pepper

Steps
Grill the chicken breast. Salt it and let it cool, then cut it into strips.
Clean and wash the lettuce thoroughly.
Cut the tomatoes into wedges.
Peel the cucumbers and cut them into cubes.Peel the avocado and cut it into cubes.
In a serving dish, add the lettuce and other vegetables.
Dress with oil, salt, and pepper.Place the chicken breast, mix, and serve.
Advice
It keeps in the refrigerator for 1 day.
The chicken breast can also be boiled.
