Citrus Mousse

The citrus mousse is a soft and rich dessert with a citrus flavor, simple to prepare, and very impressive. A dessert that contains very little sugar and is prepared without eggs. It can also be made gluten-free and lactose-free. It can be ideal for holiday meals, very light and perfect for not further overloading a menu already rich in courses. It is made with orange, lemon, and mandarins that should be strictly untreated since we will use their peel. Do you like citrus fruits? Ingredients

  • 1 orange
  • 2 mandarins
  • 1 lemon
  • 2 cups cups heavy cream
  • 1/4 cup sugar
  • 1 pod cardamom
  • 0.21 oz oz gelatin sheets
  • 3.5 oz oz jam (citrus)

  • 1 Pot
  • 1 Bowl
  • 1 Mixer
  • 1 Strainer
  • 4 Molds

Steps

  • Grate the zest of all the citrus fruits after washing and drying them well.

    Squeeze the citrus fruits and transfer the juice and zest to a pot.

    Add the cardamom and heat to 140°F.

    Remove from the heat and let it infuse for 1 hour.

    Strain and heat again with the sugar.

    As soon as the sugar is dissolved, remove from heat and add the gelatin previously soaked in cold water.

    Whip the cream until glossy and combine it with the citrus juice.

    Mix well with a spatula and pour into 4 molds.

    Decorate with the citrus jam or candied citrus. Let it rest in the refrigerator for 2 hours before serving.

It keeps for 4 days in the refrigerator.

  • Can I make this dessert lactose-free and gluten-free?

    Certainly, you can replace with lactose-free or plant-based products, such as cream in this case. For gluten-free, make sure to use certified gluten-free products
