Coconut Muffins in Air Fryer

Coconut muffins in the air fryer soft and delicious are ideal for breakfast. Muffins are small cakes with a texture similar to plumcake and can be made with bananas, strawberries, almonds, sweet and savory where they take the name of cornbread muffin. The first versions of muffins that date back to around the 1700s in England were less noble, the family baker prepared them with the leftovers of the previous day’s bread along with cookies and mashed potatoes for the servants, then they were fried to obtain light and soft muffins, they were discovered by the masters of the time, thus becoming the preferred food for tea time.

Coconut Muffins in Air Fryer

Ingredients

  • 1 1/4 cups gluten-free rice flour
  • 1/3 cup sugar
  • 1/4 cup gluten-free coconut flour
  • 1/2 cup tapioca flour (gluten-free)
  • 1/2 cup coconut milk (gluten-free)
  • 1/2 cup sunflower oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon gluten-free baking powder
  • jam
  • coconut (freshly grated)

Tools

  • 1 Bowl
  • 1 Container
  • 1 Whisk
  • 6 Muffin Liners
  • 1 Air fryer

Steps

  • In a container, break the eggs, add the coconut milk, oil, and vanilla extract. Mix well with a whisk until you get a homogeneous mixture.

    In a bowl, pour the flour, tapioca, sugar, coconut, and baking powder, then mix or sift the powders. Pour the liquid mixture into the powders and blend with a whisk to eliminate any lumps.

    Preheat the air fryer to 356°F.

    Pour into 4 or 6 muffin molds. Add a teaspoon of jam to each muffin and decorate with freshly grated coconut.

    Place the muffins inside the basket. Cook at 356°F for 15 minutes. Do the toothpick test; if it is not dry, continue cooking for another 4-5 minutes.

    Remove the basket from the air fryer and let it cool.
