Cod with white potatoes is a very simple and easy recipe to prepare. It can be made with desalted cod as proposed in the recipe or with salted cod, which will require a different procedure as it needs to be soaked and desalted.

Ingredients
- 1.76 lbs desalted cod
- 1 clove garlic
- 1/4 cup extra virgin olive oil
- 1.32 lbs potatoes
- 2 cups vegetable broth
- to taste salt
- to taste pepper
- to taste flour

- 1 Pan
- 1 Cutting Board
- 1 Lid
Steps
Rinse the cod well under running water. Dry it with kitchen paper and place it on a cutting board. With a sharp knife, remove the skin. Cut into 2×2 inch pieces and remove any bones.
Lightly flour the cod, once passed in the flour, shake it a bit to remove the excess.
Peel the potatoes and dice them into 1.2×1.2 inch cubes.
In a pan, add the oil with the peeled garlic clove and bring to heat.
Add the cod and brown over medium heat.
Add the potatoes and half of the vegetable broth.
Cover with a lid and cook for 30 minutes.
Check from time to time that it does not dry out too much and add more broth.
Shake the pan occasionally to prevent the potatoes from sticking to the bottom.
Chop the parsley and set aside.
Adjust salt and pepper.
Garnish with parsley and serve.
Tips
Add salt only at the end, as the cod will release more salt during cooking.
It can be flavored with fresh rosemary.
To make it lighter, it can be cooked with water instead of vegetable broth.
It keeps for 2 days in the fridge.
