Codfish with Raisins

Codfish with raisins is a dish to serve on the evening of the New Year’s Eve dinner, simple and tasty that will delight your guests. You can prepare it in advance and reheat it when needed. Additionally, you can add some pine nuts or prepare a variant with dried plums instead of raisins. Using gluten-free rice flour makes the product suitable for intolerant people, also making the frying drier and lighter.

Ingredients

  • 1.76 lbs codfish
  • 1.1 cups peeled tomatoes
  • 1.8 oz raisins
  • 1 clove garlic
  • 1/2 onion
  • 2 tbsp extra virgin olive oil

  • flour
  • parsley

Steps

  • Soak the codfish for at least 36 hours in cold water, stored in the fridge. Change the water every 3/4 hours. Rinse the codfish and dry it well with kitchen paper.

    Cut into not too small pieces, taking care to remove the bones and skin.

    Lightly coat with flour.

    Heat the extra virgin olive oil for frying, about 2 cups. Once it reaches temperature, fry for a minute on each side. Drain on absorbent paper.

    Soak the raisins in hot water until soft.

    Chop the onion and sauté with oil and the unpeeled garlic clove. Add the peeled tomatoes.

    Cook for a few minutes, add the codfish and raisins. Adjust salt. Cover and let cook for 20 minutes on low heat. Garnish with chopped parsley.
