Coffee Crème Brûlée

Coffee Crème Brûlée is a delicious variant of the classic crème brûlée, great to serve as a dessert at the end of a meal. Crème brûlée is an English cream cooked in a bain-marie in the oven with a thin crispy sheet of caramelized sugar. The first documentation of this cream dates back to 1691 in a French cookbook. The origin of this cream seems to be English, where in England this dessert has a strong traditional connection with the Trinity College of Cambridge and since 1879 it has been customary to prepare this cream, called burnt cream, by imprinting the school emblem on the surface of the dessert with a special heated iron. The difference between crème brûlée and pastry cream lies in the use of only cream and it does not contain starches, while the cousin Catalan cream is milk-based and cooked on the stovetop. Ingredients

  • 6 egg yolks
  • 5.3 oz sugar
  • 1 vanilla pods
  • 3.4 oz coffee
  • 2 cups heavy cream

Tools

  • 1 Pot
  • 1 Sieve
  • 6 Ramekin
  • 1 Bowl
  • 1 Whisk

Steps

  • In a pot, combine the coffee and cream with the vanilla pod from which the seeds have been removed.
    Bring to a boil.
    Meanwhile, in a bowl, mix the egg yolks with the vanilla seeds and sugar using a whisk, without whipping.
    Remove the vanilla pod from the cream and add it to the egg mixture.
    Stir well and strain through a sieve.
    Pour the liquid into ramekins or oven molds.
    Place the molds in a baking pan and pour hot water up to halfway of the molds.
    Bake in a static oven for 55 minutes at 230°F.
    At the end of cooking, the cream should be set but still jiggly.
    Let cool at room temperature and then refrigerate for at least 2 hours before serving.
    Sprinkle the cream with a tablespoon of sugar and caramelize with a torch or place under the grill at maximum power.
    In the second case, place the molds in a pan with water and ice and then place them under the grill.
