These cookies with dried fruits and dates were created with the idea of making a healthy, wholesome treat suitable for those following a more mindful diet: they are low-carb, gluten-free, lactose-free, and naturally free of added sugars. The sweetness of these cookies comes solely from the dates. Gingerbread spices and orange zest add a warm and festive aroma, but they can be made all year round. For a richer version, you can add a tablespoon of unsweetened cocoa powder.

Ingredients
- 3/4 cup hazelnuts
- 3/4 cup almonds
- 3/4 cup walnuts
- 8 dates (medium-sized)
- 1 egg
- 1 orange
- 1 tsp spices (for gingerbread)
Tools
- 1 Blender
- 1 Baking tray
Steps
Place the dried fruits on a baking tray and roast in a hot oven at 392°F.
Remove from oven and let cool slightly. Rub between hands to remove the skins.
Once the dried fruits are completely cool, transfer them to the blender jar and add the dates (make sure to remove the pits), the egg, grated orange zest, and spices.
Blend until you obtain a homogeneous mixture but not a paste.
Take the dough and form balls the size of a walnut.
Place them on a baking tray lined with parchment paper and gently flatten them.
Bake in a preheated static oven at 356°F for 20-25 minutes.
Remove from oven and let cool.

Advice
They can be stored for a week in a box or food bag.
