Ingredients
- 2 duck breast
- 1 3/4 cups strawberries
- 1 tbsp honey
- 1 sprig thyme
- as needed salt
- as needed pepper
- as needed balsamic vinegar

Procedure
Wash and dry the strawberries. Leave 8 strawberries with the stem for decoration while removing it from the rest. Chop them into pieces and place them in a saucepan with the honey, a pinch of salt, and a pinch of pepper. Cook over high heat for 5 minutes.
Meanwhile, score the duck breasts to form diagonal lines on the skin side. Heat a cast-iron pan and place the duck breasts skin side down. Sear well, remove from heat, and adjust with salt and pepper. Place in a preheated static oven at 400°F for 15 minutes.
Remove from the oven and let rest for 5 minutes. Slice thinly and arrange on two plates. Drizzle the duck breast slices with the strawberry sauce. Decorate with whole strawberries and a few drops of balsamic vinegar.
