Gluten-free brioche are small sweet buns flavored with cinnamon and citrus, made with olive oil. Ingredients
- 4 cups flour (Schaer mix B)
- 2 eggs
- 1 1/2 cups milk (or water)
- 2/3 cup sugar
- 1/3 cup extra virgin olive oil
- 1 tsp dry yeast (gluten-free)
- 1/2 tsp ground cinnamon
- 1 orange (zest)
- 1 egg white

Steps
In the bowl of the mixer, mix the flour with the yeast and sugar. Start the machine and gradually add the milk or water, then the eggs and mix for 5 minutes. Add the aromas and oil. Let it knead for another 5 minutes.
Let it rise until it doubles, in a warm place at about 75°F (24°C).
Deflate the dough and transfer it to a lightly floured work surface with rice flour.
Take pieces of dough weighing 1.7 oz (50 g) each, cover with plastic wrap.
Take the first piece, stretch it slightly with your hands, roll it up to form a small brioche. Place on a baking sheet lined with parchment paper. Repeat with the remaining dough. Cover with plastic wrap and let it rise in a warm place at 75°F (24°C) for about an hour, they should double.
Preheat the oven to 350°F (180°C). Brush the buns with beaten egg white. Bake immediately and cook for 15 minutes. Remove from the oven and let cool, then dust with powdered sugar.

Can I make gluten-free brioche also lactose-free?
Of course, you can replace milk with water or an unsweetened plant-based beverage in the same amount.
Can I replace extra virgin olive oil?
Any vegetable oil is fine, such as rice, sunflower seed, or corn oil. Extra virgin olive oil will have a more intense flavor. You can also choose to use butter, in which case it will be 7 oz (100 g).
