Gluten-Free Nua Cake with Cream

Today I am offering you the gluten-free nua cake, a delicious and soft dessert. This cake has a soft yet creamy texture thanks to the addition of dollops of custard in the batter before baking. For a lactose-free version, replace the ingredients with plant-based or lactose-free alternatives in the same quantities.

Gluten-Free Nua Cake with Cream

Ingredients

  • 4 eggs
  • 1/2 cup sugar (up to 3/4 cup)
  • 2 1/4 cups flour (Nutrifree all-purpose mix)
  • 1/2 cup whipped cream (Gluten-free)
  • 1 tsp vanilla extract (gluten-free)
  • 2 tsp gluten-free baking powder
  • 2 cups milk
  • 2/3 cup sugar
  • 5 egg yolks
  • 1/4 cup cornstarch ((cornstarch) gluten-free)
  • 1/4 cup rice starch (gluten-free)
  • 1 tsp vanilla extract (gluten-free)

Steps

  • Heat the milk over low heat. Mix the vanilla extract with the eggs and sugar and whisk. Add the starches and mix well. Pour the hot milk into the cream, stir with a whisk, and cook while continuing to stir.

    Place the cream in a shallow, wide container, cover with plastic wrap in contact. Cool quickly and transfer to the fridge for a few hours.

    It keeps in the fridge for a maximum of 3 days.

  • Break the eggs into a bowl and add the sugar with the vanilla extract.

    Whisk with electric beaters at high speed or in a planetary mixer until a light and frothy mixture is obtained. Add the flour a little at a time, continuing to beat at low speed, the baking powder, and finally the whipped cream.

    Pour half of the mixture into a previously buttered 9-inch baking pan. Add half of the custard, cover with the remaining batter.

    Decorate the surface of the cake with the remaining cream. Bake in a preheated static oven at 350°F for 1 hour.

    Remove from the oven and let cool. Unmold and decorate with powdered sugar.
