Gluten-Free Sheet Pan Pizza

The gluten-free sheet pan pizza I propose today was made with a long-rise dough in the refrigerator and very little yeast for an incredibly light and crispy pizza. I simply topped it with tomato, fresh basil, and raw extra virgin olive oil, but you can also add mozzarella or any other topping you like. This sheet pan pizza is also great the next day, either cold or reheated for a few minutes in a hot oven. I made the dough with the bread machine, but a mixer can also be used.

Gluten-Free Sheet Pan Pizza

Ingredients

  • 4 1/4 cups flour (Fioreglut Caputo)
  • 1 3/4 cups water (cold)
  • 1 tsp dry yeast (gluten-free)
  • 1 tbsp salt
  • 3 tbsp extra virgin olive oil

  • 1 Bread Machine

Steps

  • Pour the cold water with the yeast into the bread machine and start the machine.
    Select the dough and leavening program.
    Add the flour after a few minutes, then the salt.
    Also add the oil and let the machine work.
    If the dough is too hard, add water; if too soft, add more flour.
    The dough should be soft.
    At the end of the kneading phase, stop the machine.
    Remove the dough from the container and transfer it to a previously oiled bowl.
    Cover with plastic wrap and transfer to the fridge for 18 hours.
    The next day, remove from the fridge and form two dough balls.
    Wrap them in plastic wrap and let rest for 1 hour.
    Spread each ball in an oiled 10-inch pan.
    Top as desired and bake at 392°F (200°C) for about 15 minutes.
    Remove from the oven and enjoy hot or cold.
