Gratin chicken bundles are an alternative way to enjoy chicken breast. They are stuffed only with cooked ham, but they can be enriched with sautéed mushrooms and cheese or replace the cooked ham with speck or mortadella. There are many variations for stuffing them, it’s just a matter of taste. These gratin chicken bundles can also be cooked in the air fryer. Available in gluten-free and lactose-free versions.

Ingredients

  • 8 slices chicken (thin)
  • 4 slices cooked ham
  • 2 slices white bread
  • 2 sprigs parsley
  • salt
  • pepper
  • 1.7 oz extra virgin olive oil
  • 1 lemon (grated zest)

Tools

  • 1 Blender
  • 1 Baking tray

Steps

  • Put the bread in a blender with the parsley and grated lemon zest.
    Salt and pepper the chicken on one side only.
    Place half a slice of cooked ham on each chicken slice and fold it in half, like a book.
    Place the bundles on a baking tray lined with parchment paper.
    Seal the edges well with your fingers.
    Oil the surface of the chicken and sprinkle with the breadcrumb mixture.
    Bake in a preheated fan oven at 392°F for 25-30 minutes.
    Remove from the oven and serve immediately.

Advice

They can be stored in the refrigerator for 2 days.

Parsley can be replaced with other aromatic herbs to taste.
