These hemp flour buns have a very crispy texture, they are very aromatic thanks to the addition of herbs in the dough. Besides being stuffed, they are also great to accompany soups and vegetable minestrones. Hemp flour is obtained from hemp seeds, from edible Cannabis Sativa.

Ingredients

  • 3.5 oz flax seeds
  • 2 sprigs thyme
  • 2 sprigs marjoram
  • wild garlic
  • 3.5 tbsp extra virgin olive oil
  • 0.4 cups water
  • 2.5 cups all-purpose flour
  • 0.8 cups hemp flour
  • 0.5 oz fresh yeast
  • 1.25 cups water
  • 2 tsp salt

Steps

  • The evening before, prepare the aromatic herb and seed mixture.
    Boil the water and pour it over the flax seeds.
    Cover and let it rest until the next morning.
    Blend the oil with wild garlic and herbs, and set aside.

    The next morning, dissolve the yeast in the water in the stand mixer bowl.
    Add the flours and knead.
    Once the dough is formed, add the salt and continue working.
    Gradually add the aromatic oil.
    Finally, add the flax seeds.
    Let the dough rise for about an hour in a warm place.

    Turn the dough onto a floured surface.
    Shape into two loaves and cut into buns.
    Place them on a floured baking tray.
    Brush with water or egg white and sprinkle with flax seeds.
    Let rise until doubled at 75°F.
    Bake in a preheated static oven at 390°F for about 10-15 minutes.

Tips

They can be stored in a closed bag for up to 5 days. Just heat them in a warm oven at about 300°F for 5 minutes.

They can be frozen before the final rise or after baking, once cooled.
