Lactose-Free White Chocolate Cream

A lactose-free white chocolate cream to be enjoyed simply in a glass or to fill cakes, cream puffs, tarts. It can also be prepared with regular white chocolate in the same amounts. This white chocolate cream is a sort of chantilly cream because it includes whipped cream, making it lighter on the palate.

Ingredients

  • 1 cup oz soy milk (gluten-free)
  • 3 egg yolks
  • 1/4 cup oz sugar
  • 1 tbsp oz cornstarch (gluten-free)
  • 1 tbsp oz rice starch (gluten-free)
  • 1/2 vanilla pod
  • 3.5 oz oz white chocolate (vegan-gluten-free)
  • 3/4 cup oz whipping cream (lactose-free with less than 0.01% lactose or plant-based gluten-free)

Steps

  • Open the vanilla pod and scrape out the seeds.
    Heat the soy milk with the empty vanilla pod.
    In a bowl, mix the egg yolks with the sugar, vanilla seeds, and finally the starches using a whisk.
    Once boiling, add the egg mixture to the soy milk.
    Cook for about 1 minute, stirring with a whisk.

  • Coarsely chop the white chocolate and add it to the still warm custard. Stir with a spatula until you get a smooth and velvety cream. Transfer to a clean container.

    Quickly cool the cream in an ice water bath, or in the freezer, after covering it with cling film.

    Whip the cream with an electric mixer. Once cooled, add the whipped cream in two portions.
    Mix the first part with a whisk until the cream is homogeneous. Gently incorporate the second part with a spatula, mixing from bottom to top.
    Serve in small glasses or use in other recipes.
