Lemon Cups

The lemon cups are a delicious dessert lactose and gluten-free. Light yet tasty, they will be appreciated by all your guests. Lemon cups are also easy to prepare. To make them, I also prepared some ladyfingers with rice flour that can be replaced with ready-made ones, or even other cookies.

Ingredients

  • 1 cup oz rice milk
  • 3 egg yolks
  • 1/4 cup oz granulated sugar
  • 1 1/2 tbsps oz rice starch (gluten-free)
  • 1 tsp oz potato starch (gluten-free)
  • 1 lemon
  • 12 ladyfingers (gluten-free)
  • powdered sugar
  • 1/4 cup oz limoncello
  • 1/2 cup oz water

Tools

  • 1 Bowl
  • 1 Saucepan
  • 1 Whisk
  • 1 Pastry bag
  • 1 Plain nozzle
  • 1 Sieve
  • 6 Small cups

Steps

  • Pour the milk into a saucepan, place it over heat, and warm it on low heat. Grate the lemon zest and add it to the milk.

    Squeeze the lemon juice and set aside.

    In a bowl, add the egg yolks and sugar. Stir with a whisk until smooth but not foamy. Add the potato starch, rice starch, and lemon juice.

    Mix well and pour the mixture into the warm milk. Stir with a whisk and cook for about 5 minutes or until the cream thickens.

    Remove from heat and transfer to a bowl. Cover with cling film touching the surface and let cool.

    Mix the water with the limoncello.

    Place a ladyfinger at the bottom of each cup. Moisten the ladyfingers with two tablespoons of syrup each. Pour the lemon cream. Cover with another ladyfinger for each cup and moisten again with limoncello.

    Chill in the refrigerator for at least 3 hours. Dust with powdered sugar before serving.
