The lemon gratin cod fillets are a great alternative to the classic pan-fried cod fillet that the whole family, including the little ones, will love. They are quick to prepare and can be flavored in many ways, such as with orange, lime, rosemary, even mixed herbs, and why not, with paprika too. You can use both fresh and frozen fillets. This recipe can also be made gluten-free by using the appropriate ingredients. Furthermore, they can also be cooked in the air fryer.

Ingredients
- 6 cod fillets
- 1 lemon (zested)
- 5 slices white sandwich bread
- 6 tablespoons extra virgin olive oil
- 1 clove garlic
- 5 sprigs thyme
- salt
- pepper

Steps
Break the bread slices coarsely with your hands. Place them in the food processor and add the thyme and lemon zest after washing and drying them.
Peel the garlic and remove the central sprout if present. Add it to the processor with a pinch of salt and pepper, then blend for 20-30 seconds.
Place the cod fillets in a baking tray lined with parchment paper. Salt and pepper the fillets.
Cover them with the breadcrumb mixture. Oil the fillets well, one tablespoon of oil each.
Cook in a ventilated oven at 375°F for 20 minutes or in an air fryer at the same temperature and time.
Remove from the oven and serve immediately.
