Today I propose the lemon salmon in jar cooking, a light and flavorful main course. Jar cooking is a technique that allows you to prepare healthy and light foods while retaining all the flavor. The lemon salmon remains soft and juicy with a very intense lemon aroma.

Ingredients
- 14 oz salmon
- 1 lemon
- 2 tsps extra virgin olive oil
- salt
- white pepper
- chives
Tools
- 1 Microwave Oven
- 2 Jars
- 1 Knife
- 1 Cutting Board
- 1 Grater
- 1 Tongs
- 1 Bowl
Steps
Slice 4 lemon slices and set aside.
Place the salmon on a cutting board and remove any bones using fish tweezers.
Using a sharp knife, remove the skin.
Cut into pieces of 1.25X1.25 in.
Place the salmon in a bowl, season with oil, salt, pepper, grated lemon zest, and lemon juice.
Mix gently and place the salmon in the jars.
Add two slices of lemon to each jar.
Close with the lids.
Place in the microwave at a power of 750W for 6 minutes.
Remove from the microwave being careful not to burn yourself.
Let cool for 10 minutes.
Remove the clips and put back in the microwave for 2 minutes, this way the jar will no longer be under vacuum.
Open the jars and serve the salmon with finely chopped chives.

Tips
You can also flavor with freshly grated or powdered ginger.
Add fresh thyme as a substitute for chives.
