The meatballs in tomato sauce I propose today are a recipe my mom always prepares. These meatballs are super soft, not at all dry, and very tasty. Instead of bread soaked in milk, she uses boiled potatoes which make them really soft. With these meatballs in tomato sauce, it’s a must to have some good fresh bread or use them to dress pasta.

Ingredients
- 1.1 lbs ground beef
- 1 cup potatoes
- 2 eggs
- 3/4 cup grated Parmesan cheese
- salt
- pepper
- 1/2 lemon (grated zest)
- 2 sprigs parsley
- 1.1 lbs peeled tomatoes
- 5 tablespoons extra virgin olive oil
- salt
- 1/2 onion
Steps
Boil the potatoes in water with the skin on. Check the cooking with a fork.
Once warm, peel and mash them with a potato masher.
In a bowl, combine the ground beef, Parmesan cheese, chopped parsley, grated lemon zest, eggs, potatoes, salt, and pepper. Mix the mixture well. Form the meatballs.
Chop the onion and place it in a large pan with the oil.
Heat gently over low heat for a couple of minutes being careful not to burn the onion.
Add the peeled tomatoes passed through a food mill.
Adjust salt and pepper and bring to a boil.
Add the meatballs.
Cover with a lid and cook for about 20 minutes.
If the sauce dries out too much, add a ladle of hot water.
Serve hot accompanied by bread.
Tips
For an even tastier version, you can use half pork meat.
The meatball sauce can be used to dress pasta.
