The oatmeal and dried fruit cookies are delicious treats that are naturally gluten-free and lactose-free. They are prepared in 5 minutes and are very tasty. The ingredients are few and generally we have them in the pantry: eggs, honey, extra virgin olive oil, almonds, walnuts, and dark chocolate. I chose walnuts and almonds, but we can also replace them with hazelnuts, pistachios, pecans, basically whatever we like and have available. I used large oats, which I processed in a mixer to reduce into smaller pieces but not into flour. If we want a crunchier texture, just leave them whole. For those who cannot consume eggs, they can try the muesli cookies which are also sugar-free, only a little malt. Also try the oatmeal and peanut butter cookies.

Steps
Place the oats in the mixer, coarsely chop them, and set aside.
Similarly, chop the dried fruit.
In a bowl, break the egg, add the honey, oil, and mix with a fork.
Add the oats, chopped dried fruit, and dark chocolate chips.
Combine everything. Use a spoon to form cookies on a baking tray lined with parchment paper.
Bake at 356°F for 10 minutes in a preheated static oven.
Remove from the oven and let cool well.
