The overnight spelt porridge is a great alternative to the oatmeal-based one. Being smaller, the porridge remains softer and creamier. It is prepared in 5 minutes and left to rest all night in the refrigerator. It can also be made with plant-based products, making it suitable for vegans and intolerant individuals. My recipe does not include sugars, but you can add date syrup, agave syrup, stevia, or honey.

Ingredients
- 2 oz spelt (flakes)
- 2 tsps chia seeds
- 5 oz Greek yogurt 2% fat (or plant-based)
- 7 oz milk (or plant-based beverage)
- fresh fruit
- dried fruit
Tools
- 1 Spoon
- 2 Jars
Steps
In a large jar, add the spelt flakes and chia seeds.
Pour in the milk and yogurt.
Mix well with a spoon and close the jar with its lid.
Place it in the fridge for 8-10 hours.
The next day, take it out of the fridge, add fresh fruit to taste and dried fruit.
Tips
It keeps in the refrigerator for 2 days.
If you omit the chia seeds, reduce the amount of milk by 2 oz.
