Pavlova

The pavlova is a typical Australian dessert, invented by a Chef of a hotel in Wellington, New Zealand, in honor of the ballerina Anna Pavlova. Crunchy on the outside and soft on the inside, the meringue is filled with sweetened whipped cream and fresh fruit. It can be enriched as I did with a delicious white chocolate cream or simple lemon curd that contrasts the sweetness of the meringue. In this mini version, the meringue base will be quicker to cook and easier to serve. It is possible to make pavlova also gluten and lactose-free.

Mini pavlova

Ingredients

  • 3 large egg whites
  • 1 cup granulated sugar (fine)
  • 1 tbsp cornstarch (gluten-free)
  • 1 cup fresh whipping cream (lactose-free with lactose less than 0.01% or plant-based)
  • berries
  • 7 oz pastry cream (white chocolate)

Tools

  • 1 Hand mixer
  • 2 Bowls
  • 1 Pastry bag
  • 1 Baking sheet

Steps

  • Mix the sugar with the cornstarch in a container.
    In a bowl, add the egg whites and beat with an electric mixer at medium speed.
    As soon as they start to whiten, gradually add the sugar.
    Continue beating until it looks shiny and foamy.

    Preheat the oven to 230°F in static mode.

    Fill a pastry bag and form baskets or one larger basket.
    Bake and cook for about 1 hour and 30 minutes, checking occasionally to ensure the color remains white.
    At the end of cooking, leave to cool for 15 minutes in the oven.

    Remove from the oven and let cool well at room temperature.
    Fill with whipped cream, fresh fruit, lactose-free white chocolate pastry cream, and powdered sugar.

WARNING: Refer to the Italian Celiac Association’s guidelines and carefully read the ingredients to ensure they do not contain gluten contamination.

Advice

They keep unfrosted for 4-5 days in a box or paper bag without being covered, otherwise they become chewy and damp.

FAQ

  • Is pavlova a lactose-free dessert?

    For the preparation of the meringue baskets, there are no ingredients containing lactose; for the filling, use lactose-free or plant-based cream.
