Peeled Tomatoes

Homemade peeled tomatoes are a traditional Italian preserve, made at the end of summer with San Marzano tomatoes. A preserve that allows us to enjoy the true taste of tomatoes during the winter. It’s also very simple to prepare and doesn’t take much time.

Ingredients

  • 4.4 lbs San Marzano tomatoes

Tools

  • 2 Jars 2 lbs
  • 1 Pot
  • 1 Knife
  • 3 Tea towels

Steps

  • Place a large pot filled with water on the stove.

    Wash the tomatoes well, make a cross-cut at the end of each tomato.
    As soon as the water boils, blanch the tomatoes for 10-15 seconds.
    Use a slotted spoon to remove the tomatoes and let them cool.
    Peel the tomatoes and place them in sterilized jars, leaving 1 inch from the sealing edge.
    Close the jars well.

    Place a tea towel at the bottom of the pot.
    Wrap the jars with other tea towels to prevent breaking during boiling.
    Place the jars in a pot and cover completely with water.
    Cover with a lid and bring to a boil.
    Sterilize for 45 minutes from boiling.

    Let the jars cool inside the pot without touching them, to avoid breakages. Remove the jars from the pot and check that the vacuum seal has occurred.

    Store in the pantry for up to a year.
