Persimmon protein pudding is a delicious, light, and healthy dessert to enjoy both as a snack or treat but also for breakfast. It takes 5 minutes to prepare and only 30 minutes of resting in the refrigerator before you can enjoy it. Without added sugars, only the natural ones from fruit, and it is naturally lactose-free and gluten-free when using permitted ingredients.

Ingredients
- 2 persimmons
- 1 teaspoon gluten-free unsweetened cocoa powder
- 20 g protein powder
- gluten-free unsweetened cocoa powder
- chopped pistachios (gluten-free)
Tools
- 1 Blender
Steps
Peel the persimmons and transfer them to the blender jar.
Add cocoa and protein powder.
Blend for 2 minutes and transfer to 2 cups.
Let rest in the fridge for 30 minutes.
Unmold onto a small plate, decorate with cocoa and chopped pistachios.
Advice
You can use either milk, egg, or vegan protein powders.
The chopped pistachios can be replaced with any nut butter.
