Pistachio-Crusted Sea Bass Fillet

The pistachio-crusted sea bass fillet is a second course dish perfect for many occasions. With a delicate flavor, it will please all your guests, and the pistachio cream makes the fish very tasty. The pistachio-crusted sea bass fillet is a very quick and easy dish to prepare; simply dust the fish fillets lightly with flour, cook them in a pan, and finally add the pistachio pesto. Additionally, it is a naturally lactose-free dish and can also be made gluten-free.

Ingredients

  • 2 fillets sea bass
  • 4 tbsps extra virgin olive oil
  • 1 clove garlic
  • salt
  • pepper
  • 4 tbsps flour
  • 3.5 oz pistachio pesto
  • 0.42 cup dry white wine
  • 0.42 cup water (hot)
  • chopped pistachios

Steps

  • Salt and pepper the fish. On a plate, add the flour and lightly coat the fish fillets, shaking off the excess.

    Heat the oil with the unpeeled garlic clove and add the fish. Sauté the underside well for 5 minutes on high heat.

    Deglaze with the wine and when the alcohol has evaporated, cover with a lid and cook for another 5 minutes on low heat.

    Add the pistachio pesto diluted with 100 ml of hot water, let the sauce thicken for 5 minutes, and serve immediately garnished with chopped pistachios.
