Ingredients

  • 3 1/4 cups all-purpose flour
  • 3/4 cup milk
  • 1 tbsp fresh yeast
  • 2/5 cup sugar
  • 1 egg
  • 1 vanilla bean
  • 1 tsp salt
  • 5 1/4 oz pomegranate jam
  • pomegranate
  • powdered sugar
  • 1 egg

Steps

  • Dissolve the yeast in lukewarm milk.
    Add the sugar and mix well.
    In the bowl of the stand mixer, add the flour and milk.
    Start kneading.
    Add the vanilla.
    Once the dough is formed, add the egg.
    When the dough has come together again, add the butter in three parts.
    After adding the butter, add the salt.
    Continue kneading until fully absorbed.
    Let rise at 79°F until doubled.
    Turn out onto a lightly floured work surface and roll out to a thickness of 3/8 inch.
    Fill with pomegranate jam, roll up.
    Cut into slices 3/4 inch thick.

    Place each brioche on a baking sheet lined with parchment paper.
    Let rise in a warm place until doubled.
    Brush with beaten egg.
    Decorate with pomegranate seeds.
    Bake at 356°F for about 30 minutes in a preheated static oven.
    Remove from oven and let cool on a wire rack.
    Dust with powdered sugar.

Tips

They keep for 4 days.

They can be frozen both baked and before the final rise.

If freezing uncooked, just place them directly frozen the night before on a baking sheet lined with parchment paper. If freezing cooked, simply heat them for a few minutes in a hot oven at 392°F or in an air fryer, already thawed, to restore their full fragrance.

  • Can I make pomegranate brioche lactose-free?

    Sure, you can replace butter with margarine in the same quantities. If you prefer to use oil, 100 g will suffice.

  • What type of oil can I use?

    Any vegetable oil will do, rice, sunflower seed, and corn oil. Extra virgin olive oil will have a stronger flavor.
