Rice ladyfingers are light and crispy, perfect to enjoy with a good cup of tea or to use in desserts. Ladyfingers or “lady fingers” which means “lady’s fingers” are named so because their cylindrical shape resembles a finger.

Ingredients
- 3.5 oz egg whites
- 4.4 oz sugar
- 3.2 oz egg yolks
- 0.9 oz honey
- 1.8 oz rice starch (gluten-free)
- 1.8 oz gluten-free rice flour
Tools
- 1 Stand Mixer
- 1 Piping Bag
- 1 Baking Tray
Procedure
Whip the egg whites with the sugar using a stand mixer or electric beaters, meanwhile mix the egg yolks with the honey.
Add the whipped egg whites to the yolks a little at a time. Gently incorporate the sifted flour with the starch.
Using a piping bag with nozzle size 8 or 10, form sticks on a baking tray lined with parchment paper. Dust with powdered sugar before baking.
Preheated static oven at 428°F for 6-7 minutes. They keep up to 15 days in an airtight container or a well-sealed bag.
