The Roman doughnuts are a homemade dessert, typically prepared for Carnival, but they are now available year-round in bakeries, cafes, and patisseries, mainly consumed for breakfast or as a snack. The filled version is called ‘bombe’ and is filled with pastry cream or chocolate, enjoyed by both young and old. This recipe is taken from “Tradition in Evolution” by Leonardo Di Carlo. Ingredients
- 4 cups flour (W380)
- 4 cups flour (W180)
- 3 tsps compressed yeast
- 1 1/4 cups milk (lactose-free or plant-based)
- 2/3 cup sugar
- 5 eggs
- 2/3 cup butter (lactose-free or plant-based)
- 2 tsps vanilla
- 2 tbsps orange zest
- 1 tbsp salt
- 1 quart peanut oil (for frying)

- 1 Stand Mixer
- 1 Work Surface
- 1 Pot
Steps
Place the flours, sugar, yeast, eggs, and milk into the bowl of a stand mixer. Knead until you obtain a smooth and cohesive dough, about 8-10 minutes.
Then add the creamy butter mixed with the flavors and the salt.
Continue kneading until fully absorbed.
Ensure the dough is well-kneaded.Let the dough rise for two hours at 75°F-79°F covered with plastic wrap.
Transfer the dough onto a lightly floured work surface.Take 2 oz pieces of dough and shape them into doughnuts. Let rise covered at 79°F for about 2 hours.
Fry in plenty of oil at 338°F, turning them twice, and drain on paper towels using a slotted spoon.
Immediately sprinkle with granulated sugar.
Tips
Alternatively, after the first rise, let rest in the fridge overnight.
The next day, shape, let rise, and fry.
The milk can be completely replaced with water.
