Shrimp and Bean Appetizer

The shrimp and bean appetizer is a perfect mix of surf and turf, great both hot and cold, and suitable for many occasions. The combination of beans and shrimp is truly delightful; you can also choose cannellini beans to make the dish even more delicate. Ideally, you should choose dried beans, but for a quicker dish, pre-cooked ones are fine too.

Ingredients

  • 1.1 lbs shrimp (shelled)
  • 2 cups beans
  • 3 tbsp extra virgin olive oil
  • 1 clove garlic (or fresh garlic)
  • salt
  • pepper
  • 1 sprig thyme
  • 1 tsp tomato paste
  • 1.7 oz dry white wine

Tools

  • 1 Pot
  • 1 Ladle

Steps

  • Add the oil and garlic to a pot.

    Sauté for a couple of minutes over low heat, then add the beans. Let them season for 5 minutes, then add the shrimp and adjust the salt.

    Flavor with thyme and deglaze with white wine. After allowing the liquid to evaporate, add the tomato paste with water. Let it cook for 10 minutes.

    Serve with freshly grated truffle (optional).
