To prepare these soft cherry cupcakes I used the Californian base and some cherry jam. These cupcakes are very soft, great for breakfast, but also as a dessert, accompanied with vanilla ice cream, and they are also very quick to prepare.

Ingredients
- 1/3 cup butter
- 1/3 cup sugar
- 2 eggs
- 1 1/4 cups flour
- 2 tsp baking powder
- 1/4 cup milk
- 6 tsps cherry jam
- 6 cherries (for decoration)
- 12 cherries (for the batter)

Steps
Melt the butter or margarine in a double boiler and let it cool.
Whisk the eggs with the sugar until the mixture is light and frothy. Add milk or plant-based beverage, with the flour sifted with the baking powder.
Finally, add the melted butter or margarine.
Pit the 12 cherries and chop them. Add them to the mixture. Fill the molds halfway and add 1 teaspoon of cherry jam. Cover with a spoonful of batter.
Bake at 350°F for 20 minutes in a preheated static oven.
Decorate with fresh cherries.
Advice
They keep for 4 days in a pastry container.
