Soft Tart Base

The soft tart base or Californian cake is a very versatile and easy-to-prepare cake base. Its main feature is the use of a tart pan with grooves on the bottom as you can see in the photo; after turning it upside down, you will have a part to fill, which can also be hollowed out a bit more, being very careful not to break it. The recipe also includes ingredients for the lactose-free version.

Ingredients

  • 5.7 tbsp butter
  • 1/3 cup sugar
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 teaspoons baking powder
  • 3.5 tbsp milk

Tools

  • 1 Bowl
  • 1 Whisk
  • 1 Smart mold

Steps

  • Melt the butter or margarine in a double boiler and let it cool slightly.

    Whisk the eggs with the sugar until the mixture is light and fluffy. Add the milk or plant-based drink, with the flour sifted with the baking powder.

    Finally, add the melted butter or margarine.

    Pour into the smart mold ( 11 inches) previously buttered and floured.
    Bake in a static preheated oven at 356°F for 25 minutes.

    Unmold and let cool on a wire rack.

Tips

The soft tart base is used upside down.
Without a smart mold, you can use a tart pan and hollow out the inside a bit.

For the lactose-free version, use lactose-free or plant-based products in the same amounts.
