The soft tart base, also known as California Cake, is a very versatile and easy-to-make cake base. Its main feature is the use of a tart pan with a groove at the bottom, as seen in the photo. After flipping it, you will have a part to fill, which can also be scooped out a bit more, being very careful not to break it. The recipe also includes ingredients for the lactose-free version.

Ingredients
- 2.8 oz butter (lactose-free margarine)
- 2.5 oz sugar
- 1.25 cups all-purpose flour
- 2 eggs
- 2 tsps baking powder
- 3.4 tbsp milk (plant-based beverage)

- 1 Whisk
- 1 Smart mold (11-inch)
Steps
Melt the butter or margarine in a water bath and let it cool.
Whisk the eggs with the sugar until the mixture is light and frothy. Add the milk or plant-based beverage, with the flour sifted with the baking powder.
Finally, add the melted butter or margarine.
Pour into the greased and floured smart mold (11-inch).
Preheat oven to 350°F and bake for 25 minutes.Unmold and let cool on a rack.
Tips
The soft tart base is used upside-down.
Without a smart mold, you can use a tart pan and scoop out the inside a bit.
