Sonia’s apple cake is a great breakfast dessert. The recipe I present to you today belongs to my blogger friend Sonia from “Arte e fantasia a tavola,” where you can find many good recipes from Italian tradition and beyond. This cake is suitable to be served as a dessert at the end of a meal, but it is also great for your children’s snack. A healthy dessert with very few ingredients and also little sugar.

SONIA'S APPLE CAKE

Ingredients

  • 3 apples
  • 6 eggs
  • 2/3 cup sugar
  • 2 cups flour
  • 1/3 cup butter (or 1/4 cup sunflower oil)
  • 1 tbsp baking powder
  • powdered sugar
  • 1 lemon

Tools

  • 1 Mixer
  • 1 Spatula
  • 1 Baking Pan

Steps

  • Peel the apples and cut them into not-too-thin slices.
    Drizzle with some lemon juice and set aside. Separate the egg yolks from the whites.
    Beat the egg whites until stiff peaks form and set aside. In another bowl, beat the yolks with the sugar. Add the egg whites to the yolk and sugar mixture, folding with a spatula.
    Incorporate the sifted flour with the baking powder and finally the melted lukewarm butter. Pour into a greased 9-inch baking pan.
    Decorate the surface of the cake with apples. Bake in a preheated oven at 350°F for about 40 minutes.
    Remove from oven and let cool before decorating with powdered sugar.
