Sonia’s apple cake is a great breakfast treat. The recipe I propose today is from my blogger friend Sonia, from “Arte e fantasia a tavola”, where you can find many good recipes from the Italian tradition and beyond. This cake is also well suited to being served as a dessert at the end of a meal, but it is also great for your kids’ snack time. A healthy cake with very few ingredients and little sugar.

Ingredients
- 3 apples
- 6 eggs
- 2/3 cup sugar
- 2 cups flour
- 5 2/3 tbsp butter (or 4 1/4 tbsp sunflower oil)
- 1 tbsp baking powder
- powdered sugar
- 1 lemon
Tools
- 2 Bowls
- 1 Mixer
- 1 Spatula
- 1 Baking pan
Steps
Peel the apples and cut them into slices that are not too thin.
Drizzle them with some lemon juice and set aside. Separate the yolks from the whites.
Whisk the egg whites until stiff peaks form and set aside. In another bowl, beat the yolks with the sugar. Add the egg whites to the yolk and sugar mixture, folding with a spatula.
Incorporate the sifted flour with the baking powder, and finally, add the melted butter. Pour into a greased 9-inch baking pan.
Decorate the cake’s surface with the apples. Bake in a preheated static oven at 350°F for about 40 minutes.
Remove from oven and allow to cool before decorating with powdered sugar.
Tips
It keeps for 4 days in a cool place.
It can also be made lactose-free by replacing the butter with lactose-free butter or with sunflower or rice oil at 80% of the butter amount.
