The stuffed fritters are really delicious, one leads to another, perfect for Carnival. Moreover, they are very easy to make, you prepare the choux pastry and fry them, then once cool, you fill them. Also available in a lactose-free version. The fritters can be filled with any cream or jam.

Ingredients

  • 1 2/3 cups flour
  • 1 cups eggs
  • 9 tbsp butter (lactose-free with lactose less than 0.01% or vegetable)
  • 7/8 cups milk (lactose-free with lactose less than 0.01% or vegetable)
  • 1 pinch salt
  • 1 pinch sugar
  • 1 cups hazelnut spread
  • 1 1/2 tbsp powdered sugar

  • 1 Bowl
  • 1 Mixer
  • 2 Spoons
  • 1 Piping bag

Steps

  • Pour the milk, butter, sugar, and salt into a saucepan.
    When it starts to boil, add the flour all at once and mix the dough.
    Cook for about 2 minutes, until the mixture forms a ball and detaches from the sides of the pot.
    Transfer the dough to the bowl of a stand mixer and with the whisk, run the machine at low speed to cool the mixture.
    Add one egg at a time, adding the next only when the previous one has been absorbed.
    Heat the peanut oil to 320°F.
    Using two teaspoons, form small balls and drop them into the oil.
    Once the fritters are golden and well puffed, remove them from the oil with a slotted spoon.
    Drain on absorbent paper until completely cooled.
    Fill a piping bag with cocoa and hazelnut cream and fill the fritters.
    Dust with powdered sugar.

Tips

They can be filled with any kind of nut cream, cocoa, or various jams.
