Stuffed Fritters

The stuffed fritters are truly delicious, one leads to another, perfect for Carnival. They are also very easy to make; prepare the choux pastry and fry it, then once cooled, fill them. Available in lactose-free versions. The fritters can be filled with any cream, even custard or jams.

Ingredients

  • 1.6 cups flour
  • 5 large eggs
  • 1/2 cup butter (lactose-free with less than 0.01% lactose or plant-based)
  • 7/8 cup milk (lactose-free with less than 0.01% lactose or plant-based)
  • 1 pinch salt
  • 1 pinch sugar
  • 1 cup hazelnut spread
  • 2 tbsps powdered sugar

  • 1 Bowl
  • 1 Mixer
  • 2 Spoons
  • 1 Piping bag

Steps

  • Pour the milk, butter, sugar, and salt into a saucepan.
    Once it starts boiling, add the flour all at once and work the mixture.
    Let it cook for about 2 minutes, until the mixture forms a ball and detaches from the sides of the pot.
    Transfer the dough to the bowl of a stand mixer and use the paddle attachment on low speed to cool the mixture.
    Add one egg at a time, adding the next only when the previous one is absorbed.
    Heat the peanut oil to 320°F.
    Use two teaspoons to form small balls and drop them into the oil.
    Once the fritters are golden and well puffed, remove them from the oil with a slotted spoon.
    Let them drain on paper towels until completely cooled.
    Fill a piping bag with cocoa and hazelnut cream and stuff the fritters.
    Dust with powdered sugar.
