Ingredients

  • 2 eggs
  • 2 tbsp unsweetened cocoa powder
  • 1/3 vanilla bean
  • 1 tsp clarified butter (or coconut oil)
  • 2 tbsp Greek yogurt
  • 1 peach
  • strawberries (or blueberries, raspberries)
  • 1 tsp chopped hazelnuts

Steps

  • Break the eggs into a bowl and beat them with a whisk or fork.

    Add the vanilla seeds and the cocoa.

    Stir vigorously to remove lumps.

    Heat a pan with the butter or coconut oil.

    Pour the egg and cocoa mixture into the pan.

    Cook on just one side for 3-4 minutes.

    Place on a plate and let cool.

    Fill with Greek yogurt, peach slices, strawberries and the hazelnut pieces.
