Sweet potato sticks are a tasty, light, and above all healthy side dish. Sweet potatoes provide few calories, are rich in fiber and vitamins, and are not nightshades. Ingredients
- 2.2 lbs sweet potatoes ((or American))
- 3 tbsps rice starch (gluten-free)
- 4 tbsps extra virgin olive oil
- 1 tsp thyme
- 1 tsp sweet paprika
- 1 tsp hot paprika
- 1/3 tsp garlic powder
- salt
- pepper

Steps
Peel the potatoes and rinse them under running water. Dry them well with kitchen paper.
Cut them into slices about 1/4 inch thick. For each slice, cut sticks about 1/4 inch thick.
Gather the potatoes in a large bowl. Add the rice starch, spices, and salt.
Mix well and finally add half of the oil.
Arrange all the sticks well spaced on a baking tray lined with parchment paper. Oil with the remaining oil.
Bake in a convection oven at 375°F for about 20-25 minutes.
Remove from the oven and serve immediately.
