Ingredients
- 1 egg
- 1/4 cup sugar
- 1/2 cup yogurt
- 3/4 cup gluten-free rice flour
- 1/4 cup gluten-free coconut flour
- 1 teaspoon gluten-free baking powder
- 1/2 cup almonds
- 1 teaspoon vanilla extract

Steps
In a large bowl, whisk together the egg, sugar, and vanilla extract without beating.
Add the yogurt, mixing well.
Combine the coconut flour, baking powder, and rice flour, mixing until a soft but workable dough is obtained.
Add chopped almonds and mix well.
Form a log and cut into slices about 1/2 inch thick with a dough scraper, placing them on a baking tray lined with parchment paper and flattening them slightly.
Bake in a preheated static oven at 338°F for 15–18 minutes, until the edges are lightly golden.
Allow the yogurt and almond cookies with rice flour to cool completely, and if desired, dust with powdered sugar.
