The apple fritters without leavening are a very delicious treat typical of Italian cuisine. They are easy and quick to prepare, treats of the Carnival period here in Lucca are also prepared for Father’s Day, but then they can be made all year round. The dough is a kind of choux pastry, simply formed with a spoon dropping the dough into the oil then passed in the sugar, thus forming soft, golden fritters with a juicy and delicious heart.

- 1 cup water
- 3 1/2 tbsps butter
- 3 eggs

Let’s see how to prepare the fritters.
First of all, heat the water in a small pot and once hot, melt the butter with a pinch of salt. Once melted, remove the pot from the heat and pour in the flour all at once, put it back on the heat, and mix well with a spoon until the dough comes away from the sides. Let it cool slightly and then add one egg at a time, stirring vigorously, each egg must be well incorporated. At this point, peel the apples and cut them into cubes, put them into the prepared dough and mix well.
In another pot with high edges, heat plenty of vegetable oil, using a spoon take a bit of dough, immerse it in the oil, and fry 3/4 fritters at a time, turn the fritters at least once, cook them until golden brown, when ready place them on paper towels, for a few seconds to remove excess oil. Meanwhile, fill a plate with sugar, where you will then pour the hot fritters, roll in the sugar and place the fritters on a serving plate, when you have finished frying, enjoy them while still hot, they are out of this world.

The fritters can be stored in a closed container for 2/3 or directly in the oven, if you want you can also add a bit of cinnamon.
