Bean and pea burgers, are vegetarian burgers and vegan and are gluten-free. They are very tasty and easy to prepare, delicious both hot and at room temperature, great accompanied by a nice salad. Perfect for filling a nice big sandwich. A great idea to make your children eat legumes.

Ingredients
- 1 cup canned borlotti beans
- 1 cup canned peas
- Half onion
- to taste gluten-free breadcrumbs
- to taste extra virgin olive oil
- 1 tbsp bean water
- 1 tbsp cornstarch (maizena) gluten-free
- 1 leaf sage
- to taste salt
- to taste pepper

Preparation
Let’s see how to prepare bean and pea burgers.
1- Drain the beans and peas, keeping at least one tablespoon of bean water. Chop the onion and sauté in a pan with a drizzle of oil, add the beans and peas, just a couple of minutes to season, then add salt, pepper, and sage.
2- Transfer everything to a blender and blend, pour the mixture into a bowl, add the tablespoon of cornstarch and the tablespoon of breadcrumbs and mix. If it’s too dense, add a little of the reserved bean water, but not too much, try making a burger to see if it stays nice and compact.
3- Prepare the bean and pea burgers by making balls, pressing the mixture well, then flattening a bit to form the burger, coat in breadcrumbs. Place on a baking sheet lined with parchment paper, add a drizzle of oil and bake at 350°F until the desired golden brown.

The bean and pea burgers keep in the fridge for a couple of days. You can double the batch and freeze them to have them ready to use, just heat them in the microwave for 1 minute.
