Preparation
Let’s see how to prepare the canapés with tuna mousse and bottarga
Place the capers, lemon juice, a small bunch of parsley, and butter at room temperature, cut into pieces, into the blender cup. Blend everything until the mixture becomes smooth and homogeneous, pulsing to avoid overheating the ingredients.
Next, add the tuna, a pinch of salt and pepper, and continue pulsing until well mixed.
Take a piping bag and fill it with the prepared mousse, using a star tip. Take the crackers and fill them with the mousse, starting from the outside and working inward, creating a mountain-like shape. Sprinkle bottarga on each canapé and garnish with a parsley leaf.
I used crackers, but sandwich bread or puff pastry vol-au-vents, which you can shape as desired, are also delicious.
Notes
The canapés with tuna mousse and bottarga are already delicious as is, but you can certainly add capers on top or a slice of lemon.
Store in the refrigerator for up to 2 days covered with food wrap.
