Carrot, Potato, and Pumpkin Puff Pastry Pie

The puff pastry pie with carrots, potatoes, and pumpkin is a very tasty recipe, easy to prepare, and a great dinner saver! You can prepare the pie in the morning for the evening, just heat it up in the oven for a few minutes to bring back all its fragrance.

  • 1 roll puff pastry (rectangular)
  • 2 large potatoes
  • 7 oz pumpkin
  • 3 carrots
  • Half onion
  • to taste extra virgin olive oil
  • 1 mozzarella
  • 1 glass water
  • to taste salt

Preparation of Carrot, Potato, and Pumpkin Puff Pastry Pie

Let’s see how to prepare the puff pastry pie.

First, peel the potatoes and wash them, clean the carrots and pumpkin, and chop everything into pieces. Clean the onion and finely chop it, put a drizzle of oil and the onion in a large pan and let it sauté, as soon as it’s withered add the chopped carrots, potatoes, and pumpkin, let it sauté for a minute, add half a glass of water, salt, and mix well, lower the heat, cover with a lid and continue cooking for about 10/12 minutes, they should remain quite firm, once time is up let them cool a bit, meanwhile cut the mozzarella into pieces.

  • Take the puff pastry and spread it in a shallow rectangular baking tray, pour in the potatoes, carrots, and pumpkin, spread it over the whole pastry leaving the edges free, then close the edges by folding the pastry over itself towards the inside, take the sliced mozzarella and put it on top, trying to cover evenly. Bake in a preheated oven and cook at 350°F for about 20 minutes or until desired golden brown, always check the cooking as it may vary from oven to oven.

  • Once cooked, cut into pieces and serve hot.

I used only one mozzarella, but if you like it really stringy, you can add another one or some pecorino cheese also cut into pieces. If you have leftovers, it can be stored for a couple of days in the fridge in a closed container, just heat it up for a few minutes before enjoying.
