Classic Dove Cake

Today I propose the classic dove cake. How many times can’t you find the mold? Instead of giving up, make it in a classic round mold, what matters is the taste, not the shape. An easy recipe with a unique dough, ideal for those who don’t have much time. A very delicious dessert for Easter.

Ingredients for Classic Dove Cake

  • 1 3/4 cups all-purpose flour
  • 2 cups Manitoba flour
  • 3/4 cup milk
  • 2/3 cup sugar
  • 7 tbsps butter
  • 3 egg yolks
  • 1 egg
  • 4 tsps dry yeast
  • 1 cup candied orange
  • zest of one orange
  • 1 tsp honey
  • 1 vial rum
  • to taste vanilla
  • 1 pinch salt
  • 2 1/2 oz almonds (plus more for decoration)
  • 1 1/2 oz egg white
  • 1 cup powdered sugar
  • to taste sugar granules

Preparation for Classic Dove Cake

Let’s see how to prepare the Dove Cake.

First, in a bowl, put the yeast with the milk, honey, and vanilla, stirring until the yeast dissolves. Prepare the butter by cutting it into pieces. In the stand mixer bowl, pour the flours with the sugar, egg, and egg yolks, then add the yeast mixture. Start the mixer on low speed, and when the mixture starts to become homogeneous, begin adding a piece of butter at a time until absorbed, continuing until all butter is used. Add the pinch of salt, grated lemon and orange zest, and candied orange, leaving some aside. Add the rum while the mixer is running, increase the speed, and mix until the dough is homogeneous. Transfer to a floured work surface, work it a little to form a compact ball, return it to the bowl, cover with plastic wrap, and let it rise until doubled. Once doubled, place it back on the work surface, spread and stretch the dough, add the remaining candied orange, close the dough by folding it inward, place it in a greased and floured springform pan or lined with parchment paper, cover with plastic wrap, and let rise until doubled.

While waiting for it to rise, prepare the glaze. Finely chop the almonds with a food processor, mix with powdered sugar, then add the egg white, stirring vigorously. Once the Dove Cake has risen, brush it generously with glaze, cover with sugar granules and almonds. Bake in a preheated oven and cook at 356°F for about 45 minutes.
