Cod Fillets with Cherry Tomatoes and Olives

Ingredients

  • 3 fillets frozen cod (100g each)
  • to taste cherry tomatoes
  • 1 clove garlic
  • to taste pickled capers
  • to taste black olives
  • to taste extra virgin olive oil
  • to taste Salt and pepper
  • 1 sprig parsley
  • Half glass of white wine
  • to taste hazelnut crumbs

Steps

  • Let’s see how to prepare the fillets.

    In a ceramic baking dish, put the extra virgin olive oil with the crushed garlic, put in the oven for a few minutes to heat the dish and lightly brown the garlic, then remove the dish from the oven, add the cod fillets, halved and some whole cherry tomatoes, also add capers and olives, season with salt and a pinch of pepper and a bit of chopped parsley, add half a glass of white wine and bake at 350°F (180°C) for about 20/25 minutes or until golden brown as desired, when cooked add a bit more chopped parsley and to give a crunchy touch, some hazelnut crumbs. Serve hot and enjoy!

Notes

You can also serve with toasted bread slices. If you have leftovers, store in the refrigerator for a day in a closed container.
