Ingredients
- 28 oz Potato Gnocchetti
- 1 3/4 cups Tomato Sauce
- 1 Garlic
- 1 cup White Wine
- 1 Parsley
- To taste Extra virgin olive oil
- To taste Salt, pepper, chili pepper (optional)

Preparation of creamy scampi gnocchetti
Let’s see how to prepare scampi gnocchetti. Clean the scampi, rinse them well, remove claws, head, and tail, discard shell and black thread, set aside the meat, leave some whole scampi to garnish the dish. Prepare a broth with the removed parts, head, claws, and shell, put everything in a small pot with water along with 1 stalk of celery and half an onion, a pinch of salt. When it comes to a boil, cook for 10/15 minutes. While the broth is cooking, in a pan cook the tomato sauce with a drizzle of oil and a pinch of salt for about 10 minutes. Once the broth is ready, take another pan, sauté the whole clove of garlic in a bit of oil, then add the cleaned scampi, after a few minutes pour the wine and let it evaporate. When the wine has evaporated, pour a ladle of broth and cook a few more minutes. At this point, remove from the heat, remove the garlic and blend with an immersion blender, leaving some small pieces. Now add the tomato sauce and the whole scampi set aside, adjust with salt, pepper, and chili pepper, and cook for 7/8 minutes. Once the gnocchetti are cooked, drain them and add to the sauce, toss with chopped parsley.
Notes
To clean the scampi while keeping them whole, use scissors. Cut the cartilage making an incision under the tail, cut along the sides leaving the legs, remove the meat and the black thread and rinse both the meat and the whole scampi well. You can also add 1/2 tablespoons of cream to the sauce.
