- 13 oz Fusilli
- 4 oz Smoked pancetta
- 1 jar Jar of fine tomato pulp
- Salt, to taste
- Chili pepper, to taste
- 1/2 Onion

Preparation — Fusilli with pancetta and tomato
Let’s see how to prepare the fusilli.
First, brown the pancetta in a large nonstick pan; the pancetta releases its fat so there’s no need to add oil. Chop the onion and sauté it together with the pancetta, then add the tomato pulp, salt and chili and finish cooking. In a pot with plenty of salted water, cook the pasta; when it is almost done, take a little of the cooking water and pour it into the pan, drain the pasta al dente and add it to the pan, tossing it with the pancetta sauce so it absorbs the flavor.
Notes
I didn’t add oil, but if it seems too dry add some. When serving, give a nice sprinkle of Parmesan.
